Soft and green interior
Restaurant Alimentum (Denmark) has earned Aalborg’s first Michelin star for its unwavering commitment to remaining close to the ingredients transformed in its Løkkegade kitchen.

With pride in their voices, the team at Alimentum report that they’ve hired their own organic farmer – forging a strong partnership with the Vendsyssel farm where their vegetables are grown. They have the same proximity to other ingredients such as fish, chicken and dairy products. This proximity is also felt in the restaurant itself, located in the city's old working-class neighbourhood, where you're greeted with a big smile.
The restaurant is located on a street corner, allowing light to enter from two sides, which is dimmed by thin curtains. The colour spectrum of the interior ranges from brown to green, while the restaurant’s walls are decorated with elements such as grains and shells.
Focus on acoustics
To achieve its special atmosphere and provide a break from city life, the space has several sound-absorbing surfaces. The entire ceiling surface is clad with white-painted Troldtekt acoustic panels, which gives the room a unified look while ensuring good acoustics, as does the wall surface with wood and the wall surface with moss, ferns and other plants. When the door to the restaurant closes, it is also clad in greenery, creating a sense of focus on the company you are with and the green, local food being served. Restaurant Alimentum has been recognised by the Michelin Guide in 2025!
